Raw carrots include 88% water, 9% carbs, 0.9 percent protein, 2.8 percent dietary fibre, 1% ash, and 0.2 percent fat. The majority of the dietary fibre in carrots is cellulose, with minor amounts of hemicellulose, lignin, and starch. Sucrose, glucose, and fructose are examples of free sugars found in carrots.

-carotene, as well as smaller levels of -carotene, lutein, and zeaxanthin, contribute to the carrot’s rich orange colour. – and -carotenes are partially converted to vitamin A, providing more than 100% of the Daily Value (DV) per 100 g carrot serving (right table). Carrots are also high in vitamin K (13 percent daily value) and vitamin B6 (11 percent daily value), but they are low in other critical nutrients.
